Edible or gourmet mushrooms have been used as remedies in many countries for thousands of years. Some cultures have different views on them like a delicacy, a medicine, an energy food for warriors, an offering to the gods, or an exotic food for the rich.
Today, there are still so many Pinoys who are unfamiliar or misinformed with the existence of mushrooms. Many of them don’t even know how to cook it. Amusingly, all they know is that when there is thunder and lightning, lots of mushrooms will just sprout magically.
Oyster mushrooms, the fruit of the fungi that resembles like an oyster, are one of the newest mushrooms to arise lately but have still managed to become a noteworthy fungus due to their distinct taste and bite, and extensive health benefits.
Many people don’t know that one of the most impressive oyster mushroom benefits is that it inhibits the growth of certain cancer cells in the breast or prostate based on a study conducted by the Methodist Research Institute’s Cancer Research Laboratory in Indianapolis. They have high content of anti-oxidants and effective anti-inflammatory properties making oyster mushrooms potential cancer-fighting foods. In fact, mushrooms are used nowadays as an adjunct or support therapy to some cancer patients.
Here’s a list of its benefits: Antioxidant, Anti-Bacterial, Anti-Inflammatory, Anti-Cancer (Breast and Prostate), Anti-Tumor, Boost Immune System, Cholesterol Lowering, Controls Blood Pressure, Cures Anemia, Eating it Raw Eliminates Nematode Worms (Small Roundworms) in Human Guts, Good for Pregnant Women, Heals Skin Problems, Help Prevent Allergies, Keeps Blood Sugar Low, Maintain Healthy Bones, Prevents Liver Disease (Counter Hepatitis C Virus), Prevents Tooth Decay, Prevents Premature Aging, Relieves Constipation, Reduces Hyperacidity, and Reduces Heart Exhaustion (Source: U.S. Department of Agriculture)
Gathering and eating wild mushrooms is risky, if you CANNOT identify which is edible or toxic. And because mushrooms are a favorite food of a reserved couple (Mr. and Mrs. John-Eric Taburada), they created a farmhouse located at Minglanilla Cebu, wherein they cultivate oyster mushrooms to satisfy their hunger and passion. They were trained by the Department of Agriculture in Region VII just last year and currently have already supplied fresh organic oyster mushrooms to restaurants, schools, cafeterias, a food catering business, a sports center, a hospital, and health-conscious individuals.
They said, “Most mushroom products in the Philippines are imported, that is the reason why they are expensive, even those that came from China. We grow them locally, so that it will be affordable and the lower-income citizens, poverty-stricken vegetarians and mushroom-loving residents can eat them, regularly. We believe that we have this moral responsibility of sharing a healthy regimen, because we CARE. We also help the environment by recycling the agricultural farm waste — rice straws, sawdust, banana leaves, grass clippings, corn cobs, and etc., which can be used as a growing substrate, and then returned to the land as an organic mulch or fertilizer. Our mushrooms are very clean, ORGANIC, and cultivated carefully matching their natural habitat with NO pesticides, herbicides, synthetic fertilizers, animal manure, soil, formalin or any chemicals used. You are SAFE with us.”
Oyster mushrooms are easy to cook. In fact, you can create many recipes from them. To fully enjoy their taste, simply cooking them such as deep-frying (crispy chicharon or coated with bread crumbs), stir-frying (adobo style), sautéing, or roasting (barbeque) is recommended. You can also use them as a perfect meat substitute or an add-on to your dishes, and the following are some cooking ideas: Creamy soup, Mushroom Omelet, Kare-Kare, Mushroom Curry, Pizza, Spaghetti or Pancit, Chop Suey, Siomai, Lumpia, Burger Patty, Nugget, Tempura, Siopao, Tocino, Tapa, or Sizzling Sisig.
Mushrooms have the natural Umami flavor that will enhance the taste of your food, you don’t need to add MSG (Monosodium Glutamate)… forever.
